Rooster and Rice is a classic Chinese dish that is made by stir-frying julienne cut roast chicken or cooked chicken pieces with cooked rice, Chinese sausage, mushrooms, vegetables, and a variety of seasonings. The rice is usually cooked in an aromatic chicken or pork broth for extra flavor. It is usually served as a main course with a side of vegetables or soup.
Ingredients
1 whole rooster
2 cups long grain rice
4½ cups chicken broth
2 tablespoons olive oil
1/2 onion, diced
1 teaspoon garlic powder
1/4 teaspoon thyme
1/4 teaspoon oregano
Salt, to taste
Freshly ground black pepper, to taste
Instructions
1. Preheat oven to 350°F.
2. Heat olive oil in a large skillet over medium heat.
3. Add onion, garlic powder, thyme, and oregano, and cook until onion is soft, about 7-8 minutes.
4. Add the rooster and brown on both sides, about 8 minutes.
5. Remove rooster to a plate and set aside.
6. Add the chicken broth to the pan and bring to a boil.
7. Add the rice and lower the heat to a simmer.
8. Place the rooster on top of the rice and cover the pan with a tight-fitting lid.
9. Transfer the skillet to the preheated oven and bake for 45 minutes.
10. Remove from oven, fluff the rice with a fork and season with salt and pepper to taste.
11. Serve the rooster and rice hot. Enjoy!
