Pot au Pho

Pot au pho is a type of French-Vietnamese soup made with beef broth, fresh herbs, and flat rice noodles. It is often topped with basil, mint, bean sprouts, onions, and a sprinkle of lime juice, and served with a side of hoisin sauce and Sriracha chili sauce.

Ingredients:

• 1 tablespoon oil
• 2 cloves garlic, minced
• 2 cups chicken broth
• 2 cups water
• 2 tablespoon fish sauce
• 2 star anise or cloves
• 1 cinnamon stick
• 1/2 teaspoon black pepper
• 1/2 teaspoon grated ginger
• 2 cups rice noodles
• 6 ounces cooked beef or pork slices
• 8 ounces cooked prawns or shrimp
• 2 green onions, thinly sliced
• 1/4 cup cilantro, chopped
• Lime wedges for garnish

Instructions:

1. Heat the oil in a large saucepan over medium heat. Add the garlic, and cook for 1 minute.

2. Add the broth, water, fish sauce, star anise (or cloves), cinnamon stick, black pepper, and grated ginger. Bring to a boil.

3. Reduce the heat to low, and simmer for 5 minutes.

4. Add the rice noodles, beef or pork, and prawns or shrimp. Simmer for 5 minutes or until the noodles are tender.

5. Remove from heat and stir in the green onions and cilantro.

6. Serve the hot soup in individual bowls with lime wedges to garnish. Enjoy!
