1. French Lick Lodge’s Wild Mushroom Risotto

Ingredients:

- 1/2 ounce dried porcini mushrooms
- 2 tbsp canola oil
- 1/2 cup finely minced shallots
- 2 cups Arborio rice
- 6 cups chicken broth
- 1/2 cup diced smoked ham
- 1/2 cup diced onion
- 2 tsp minced garlic
- 1/2 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper, to taste

Directions:

1. Place the porcini mushrooms in a bowl and cover them with boiling water. Leave them to soak for 30 minutes.

2. Heat the canola oil in a large saucepan over medium heat.

3. Add the shallots and cook for about 5 minutes, stirring occasionally.

4. Add the Arborio rice and stir to coat. Cook for another 3 minutes.

5. Add the chicken broth and bring the mixture to a gentle simmer.

6. Stir in the diced smoked ham, onion, and garlic. Simmer for about 15 minutes, stirring often.

7. Drain the porcini mushrooms, reserving the liquid. Add the mushrooms and the reserved liquid to the risotto.

8. Simmer until the risotto is creamy and al dente, stirring often, about 8-10 minutes.

9. Remove the pan from the heat and stir in the Parmesan cheese.

10. Season with salt and freshly ground black pepper to taste.

11. Serve the risotto hot with additional Parmesan cheese, if desired. Enjoy!
