Potato cakes recipe Paula Deen

Ingredients

-3 cups of cooked mashed potatoes
-1 cup of shredded sharp cheddar cheese
-1/3 cup of finely diced onion
-2 eggs, lightly beaten
-Salt and pepper to taste
-Vegetable oil, for frying
Instructions

1. In a large bowl, mix together the mashed potatoes, cheese, onion, eggs, salt and pepper.

2. Scoop out 1/4 cup of the mixture and separate into small cakes.

3. Heat the oil in a large skillet over medium-high heat.

4. Place the potato cakes in the skillet, being careful not to overcrowd the pan.

5. Cook for 2 to 3 minutes on each side or until golden brown.

6. Remove the potato cakes from the skillet and place on a paper towel-lined plate to drain.

7. Repeat with the remaining potato cake mixture.

8. Serve warm. Enjoy!
