Nom Nom Paleo spicy tuna cakes recipe

Ingredients:

- 2 5-ounce cans of wild-caught tuna
- 1/4 cup almond flour
- 1/2 teaspoon sea salt
- 1 teaspoon garlic powder
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
- 2 large eggs
- 2 tablespoons chives, finely chopped
- 2 tablespoons extra-virgin olive oil, plus extra for greasing
- 2 tablespoons freshly squeezed lemon juice

Instructions:

1. Drain the tuna and transfer it to a medium bowl.

2. Add the almond flour, sea salt, garlic powder, black pepper, and oregano to the bowl and stir until everything is evenly combined.

3. Crack the eggs into the bowl and mix them in.

4. Stir in the chives and the olive oil.

5. Heat a medium non-stick skillet on medium-high heat and grease it with a little extra oil.

6. Scoop about 1/4 cup scoop of the tuna mixture into the skillet and pack it down a little to form a patty. Repeat with the remaining mixture, working in batches so as not to overcrowd the skillet.

7. Fry the patties for 2-3 minutes on each side, or until golden.

8. Transfer the fried patties to a plate and drizzle with the lemon juice. Serve and enjoy!
