Rice a Roni Spanish Rice

Rice-A-Roni Spanish Rice is a pre-packaged food product made by combining white rice, vermicelli noodles and Spanish-flavored seasonings.

Ingredients

1 tablespoon olive oil

1 red bell pepper, chopped

1 small onion, chopped

1 1/2 cups uncooked long-grain white rice

2 tablespoons tomato paste

3 cups chicken broth

1/2 teaspoon garlic powder

1/2 teaspoon ground cumin

1/4 teaspoon cayenne pepper

1/4 teaspoon salt

1/4 teaspoon freshly ground black pepper

1 can (4 ounces) diced green chilies

1/2 cup frozen peas

1/2 cup frozen corn kernels

Instructions

1. Heat oil in a large pot over medium heat; add bell pepper and

onion. Cook, stirring often, until onions are translucent and vegetables

are softened, about 5 minutes.

2. Add rice and tomato paste to the pot; cook and stir until

rice is lightly toasted, about 3 minutes.

3. Pour chicken broth into the pot. Stir in garlic powder, cumin,

cayenne pepper, salt, and black pepper.

4. Bring the mixture to a boil. Reduce heat, cover, and simmer

for 20 minutes.

5. Stir in chilies, peas, and corn; cover, and simmer an

additional 10 minutes.

6. Remove from heat and let stand, covered, for 5 minutes

before fluffing with a fork and serving.
